December's New Oil is here and we are delighted to share it with you. A celebration of the harvest, this oil is lively and vibrant. Enjoy! Shipping December 1st.

Harvest Notes

Our harvest began on November 4th. I never tire of this experience! We begin by gathering mostly the greenest olives and some just beginning to show shades of what we call “cherry.” Then they are placed into the waiting bins that will ultimately head to the mill at Frantoio Grove just a few hours later for pressing under the watchful eye of Pat Martin, olive miller extraordinaire!  

The earliest varietal is Favalosa, native to Italy, grown on a trellis system for easier picking. This third-year crop has again produced oil with intense, bright fruitiness and green characteristics that is very high in polyphenols producing that requisite “pungency” we all look for in Olio Nuovo. I should say, I am enamored with this variety and think it is producing some very luscious, full-bodied oils…Yay!

With a little break to allow the other varieties to ripen up, we headed back out to begin harvesting our Taggiasca and Casaliva on November 18th. These varieties are native to Liguria and the Lake Garda region, and continue to produce oil with very pleasant green almond and floral notes with lush, herbal overtones and a finishing punch. Most of this oil will go into the KATZ Chef’s Pick EVOO in late-January.

But for now, let’s get to what we are here to announce…the blending of the 2024 KATZ December’s New Oil, Olio Nuovo. As always, it is bottled unfiltered, and this year is a blend of 70-80% Favalosa from the November 4th pressing together with some lovely green new harvest Frantoio oil from our friends and collaborators at Frantoio Grove. 

The finished elixir does not lack for pungency and intense fruitiness which are the requisite notes for new oil. Celebrate this year’s release with our tradition of taking a good loaf of rustic style bread, sliced and grilled, slathered in KATZ December’s New Oil with a good pinch of sea salt and of course, celebrate all this with good friends and family!
